Ingredients for 1 servings:
- 300 g flour
- 200 g butter
- 225 g sugar
- 3 eggs
- 1 lemon(s)
- 1 kg apples, sour
- 50 g raisins
- ½ tsp cinnamon
- 3 tbsp milk
- 1 tbsp pudding powder, vanilla

This recipe is sufficient for a 26 cm springform pan. Knead the flour with the butter, 175 g sugar, one egg, and the grated zest of one lemon. Cover the dough and chill for 2 hours. Peel and quarter the apples. Cut the apples into thin wedges and toss with the lemon juice. Add the raisins, 50 g sugar, and the cinnamon to the apples. Preheat the oven to 200 degrees Celsius (top/bottom heat). Roll out the dough and line the bottom and sides of a springform pan. Prick the dough several times with a fork and spread the apple mixture on top. If there is any leftover dough, cut it into thin strips to decorate the cake with a lattice (similar to a Linzer torte). Whisk 2 eggs with the milk, 1 tbsp sugar, and custard powder. Pour over the apples. Arrange the dough strips on top in a lattice pattern. Bake the cake on the second rack from the bottom for 50-60 minutes, let it cool slightly in the tin and then place it on a wire rack to cool completely.
