Ingredients for 4 servings:

  • 135 g flour
  • 3 tsp, crushed cream of tartar
  • 1 tsp, leveled baking soda
  • ½ tsp sugar
  • 60 g butter
  • 125 g cheese, grated
  • 80 ml milk, cold
  • 1 pinch of salt

Airy cheese pastries, quick and easy

Cut the butter into cubes and chill. Preheat the oven to 230°C (200°C fan-assisted oven). Mix the flour with salt, baking powder, baking soda, and sugar. Use a fork to work the cold butter pieces and cheese into the flour mixture until crumbly. The butter should still be cold, with some small pieces still visible. Quickly mix in the cold milk with a fork until you have just about a workable dough. Do not knead it; simply pour it onto the worktop, flatten it, and roughly shape it into a 15 x 15 cm square. It’s best to work quickly; it doesn’t need to look even; this will ensure the biscuits are particularly airy on the inside and crispy on the outside. Cut twice crosswise and twice lengthwise with a knife to create 9 squares. Place on a baking sheet and bake for 10-12 minutes until golden brown.
