Ingredients for 4 servings:
- 3 small cucumbers
- 5 small radishes, white or red, (do not use beer radishes!)
- 6 small onions, red
- 2 medium-sized garlic cloves
- ½ tomato pepper, red
- 1 small chili pepper(s), fresh or frozen, green
- 3 tbsp dill, finely chopped
- 1 tbsp oregano, fresh or dried
- ½ tsp caraway seeds
- ½ tsp black pepper, freshly ground
- n. B. Salt
- 1 tsp sugar, fine
- 2 tsp, leveled chicken broth powder
- 2 tbsp white wine vinegar, see appendix
- 3 tbsp sunflower oil
- n. B. Dill
- n. B. Paprika powder, sweet
- n. B. flowers and leaves
Instructions
Working time approx. 20 minutes; Rest time approx. 25 minutes; Total time approx. 45 minutes
A spicy radish salad. Recipe from Lombok, Indonesia. Radish salad, radish and red pepper.
Wash the cucumbers, radishes, bell peppers, chili, and dill. Cut off both ends of the cucumbers and radishes and coarsely grate them without peeling. Cut off both ends of the small red onions, peel them, and slice them into thin slices. Cut off both ends of the garlic cloves, peel them, and press them through a garlic press. Remove the stem from the red bell pepper, cut it lengthwise, open it, remove the seeds, and cut them lengthwise into thin strips, then cut these crosswise into small cubes. Wash the small green chili and cut it crosswise into thin slices, leaving the seeds on, and discarding the stem. Cut the dill crosswise into pieces about 3 mm long. Reserve a few stalks for garnishing. Place all salad ingredients in a bowl and mix well. Add all the spices and stir in. Let stand for 10 minutes. Add the white wine vinegar and mix everything well. Let stand for another 10 minutes. Season with salt, pepper, and white wine. Add the oil and mix well. Refrigerate until ready to serve and let it mature for at least 15 minutes. Garnish with garnish. Serve as an appetizer for 4 people. Serve as a snack for 2 people with warm baguette slices. Note: While there are fewer mistakes to be made with white wine vinegar than with balsamic vinegar, quality still comes at a price.
