Ingredients for 5 servings:

  • 1 zucchini
  • 2 carrots
  • 1 bell pepper(s), red
  • 250 g cherry tomatoes, small
  • 6 tbsp vinegar
  • 6 tbsp oil
  • 4 tsp mustard
  • 1 tsp sugar or sugar
  • 2 tsp Maggi
  • 6 tsp herbs, mixed, chopped
  • pepper
  • 1 tsp herbal salt
  • n. B. Croutons
  • 2 lettuce hearts

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the zucchini and peel the carrots, then coarsely grate both. Trim and dice the bell pepper. Wash and halve the tomatoes. Place them in a bowl. For the dressing, combine the vinegar with oil, mustard, salt, pepper, sweetener or sugar, Maggi, and the mixed herbs for the salad. Pour the dressing into the bowl with the zucchini, carrots, and bell pepper. Just before serving, trim the lettuce hearts, roughly chop them, and fold them in. Finally, stir in the croutons.
