Tomato-Mozzarella Salad

Ingredients for 2 servings:

  • 8 small tomatoes
  • 200g mozzarella
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 4 basil leaves
  • 4 tbsp balsamic vinegar
  • 2 pinches of salt
  • 2 pinches of pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

First, chop the garlic clove and onion into small pieces. Then, thinly slice the tomatoes and season them lightly with salt and pepper. Now, cut the mozzarella cheese into small cubes. Place everything in a bowl and add the balsamic vinegar. Tear the basil leaves into small pieces and sprinkle them over the salad. Finish. Serve with a few slices of Parisienne or baguette. If you love wine, I highly recommend a robust Barbera d’Asti (about €5-9 per bottle). One more small note about balsamic wine vinegar: Please don’t buy just any cheap one like the ones offered at almost all large retail chains, because these “cheap products” are substandard in terms of taste and will ruin a salad! Go to your wine merchant and ask for a good balsamic vinegar, and try it! It should be mild and not have a bite when you drink it. Don’t be afraid to spend a few euros more for it! Your palate will thank you and your friends will be delighted!
