Ingredients for 2 servings:
- 125 g mixed leaf salad, e.g. with leaf lettuce, lamb’s lettuce, rocket, baby spinach, iceberg lettuce
- 1 m.-sized carrot(s)
- 1 ball of mozzarella
- 3 tsp mustard (sweet homemade mustard)
- 3 tbsp Balsamic vinegar, light (Condimento Bianco)
- 6 tbsp olive oil
- 1 small garlic clove(s)
- herbal salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Peel the carrot and slice thinly. Wash the lettuce and cut the mozzarella into larger cubes. For the dressing, mix the mustard, Condimento Bianco, olive oil, herb salt, and the crushed garlic clove well. If the dressing is too thick, you can dilute it with a splash of water. Mix the lettuce with the carrot, mozzarella, and dressing well and serve immediately. For a vegan option, simply replace the mozzarella with smoked tofu. For a meaty twist, serve the salad with roasted chicken breast strips. Radishes also work well as another vegetable.
