Ingredients for 4 servings:

  • 10 tbsp spice mix, Arabic (Mlouchia)
  • 3 bay leaves
  • 1 cup(s) olive oil
  • 1 onion(s), sliced
  • 3 garlic cloves
  • 1 cube of beef broth
  • 3 tbsp cumin
  • salt and pepper
  • 300 g beef or lamb
  • 2 tbsp tomato paste
  • 3 liters of water, hot
  • 1 pepper or chili, if desired

The bottom of the pot should be generously coated with olive oil. Heat the oil, sauté an onion, add the mlouchia, and cook briefly. Deglaze with plenty of hot water. Stir well until the mixture comes to a boil. Add the bay leaves, spices, and garlic. Reduce the heat and simmer on low for about 3 1/2 hours, stirring occasionally. Dice the beef and add it. After about 1/2 hour, add two tablespoons of tomato paste. Simmer until the oil forms a layer on top. The total cooking time is about 6 hours. Add water occasionally. If you like spicy food, you can halve a chili or hot pepper and add it to the boil. Serve with baguette or flatbread.
