Ingredients for 1 servings:
- 150 g butter, room temperature
- 120 g sugar
- 1 packet of vanilla sugar
- 2 eggs, room temperature
- 220 g flour
- 1 pinch of salt
- 2 tsp baking powder
- 2 tbsp, heaped cocoa powder
- 250 ml milk, room temperature
- 1 liter of ice cream, up to 1.5 liters, homemade or purchased
- 3 tbsp candy (M&Ms), roughly chopped
- 300 ml cream
- e.g. chocolate syrup
- e.g. caramel syrup

Working time approx. 1 hour; Rest time approx. 6 hours; Cooking/baking time approx. 25 minutes; Total time approx. 7 hours 25 minutes
Creamy ice cream cake with M&M’s
To make this delicious chocolate sponge cake, cream the butter, sugar, and vanilla sugar until fluffy. Then add the eggs and mix thoroughly. Mix the flour with the salt, baking powder, and cocoa powder to ensure even distribution. Then, alternately with the milk, stir into the butter and egg mixture as briefly as possible. Then pour the batter into a lightly greased and lined loaf pan (approx. 30 cm long) and bake at 180°C (fan oven) for 25-30 minutes. If a skewer test comes out clean after baking, the cake is ready and needs to cool thoroughly. When it’s done, remove the batter from the pan and cut it horizontally twice with a cake cutter or knife. And since this is supposed to be an ice cream cake, ice cream is a must: You can save yourself some work, like we did, and buy your favorite ice cream. Making it yourself works too, of course. Our Chocolate Chip Cookie Dough ice cream, Nutella or banana ice cream are perfect for this. The ice cream should thaw until it has a creamy consistency that is easy to spread. But under no circumstances should it be too runny. Then it’s time to start layering: The first layer forms one of the three cake layers. This is followed by a layer of ice cream, then a layer of cake base, then more ice cream and roughly chopped M&M’s and of course the last layer. The ice cream cake should then be covered with plastic wrap and frozen for at least 6 hours. After this time, it’s time to decorate. To do this, simply whip the cream and spread it over the frozen cake. Our caramel and chocolate syrup also go really well with it, and of course a few M&M’s.
