Mocha-orange wholemeal muffins with pine nuts

Ingredients for 1 servings:

  • 180 g whole wheat flour
  • 20 g pine nuts, ground
  • 1 egg(s)
  • 80 ml sunflower oil
  • 200 ml orange juice
  • 3 tbsp, heaped dark chocolate, chopped
  • 1 tbsp coffee powder (Nescafé frappé)
  • 160 g brown sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat oven to 180°C. Separate the egg. Place the egg yolks in a mixing bowl and the egg whites in a tall mixing bowl. Beat the egg whites until stiff peaks form. Add the egg yolks, oil, and orange juice to the egg yolks and beat until fluffy. Combine the flour with the pine nuts, dark chocolate, Nescafé Frappé, and sugar. Add to the egg yolks and beat quickly. Fold in the egg whites and pour the batter onto a muffin tin lined with paper baking cups. Bake in the oven for 20 minutes. Remove the tin, let cool for 5 minutes, and then remove the muffins. Let cool completely.
