Papaya muffins

Ingredients for 12 servings:

  • 55 g butter, room-soft
  • 55 g cream cheese
  • 225 g sugar
  • 2 eggs
  • 180 ml milk
  • 2 tbsp lemon(s) – zest, grated
  • 1 tsp vanilla extract (or a few drops of flavoring or 1 packet of sugar)
  • 220 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 40 g walnuts, chopped
  • 240 ml papaya, diced (1 American cup measure)

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit). Beat together the first seven ingredients, butter and vanilla extract. Quickly mix in the next four ingredients, flour and nuts – don’t overmix! Fold in the papaya last. Line a 12-cup muffin tin with paper muffin cups and divide the batter between them. Bake in the preheated oven for about 25 minutes, until the tops are browned and a toothpick inserted into the muffins comes out clean. Let cool in the tin for 10 minutes, then transfer the muffins to a wire rack to cool completely.
