Ingredients for 6 servings:

  • 800 g minced meat, mixed
  • 100 g mortadella, very finely chopped
  • 100 g Parmesan, freshly grated
  • 50 g cornichon(s), finely chopped
  • 2 carrots, diced, pre-cooked and cold
  • 2 slices of toast, torn and not soaked
  • 1 tbsp capers, small
  • 1 tsp mustard
  • 2 eggs
  • 1 tsp thyme
  • nutmeg
  • salt and pepper
  • 3 eggs, hard-boiled
  • Breadcrumbs
  • Bacon, cut into strips, as desired

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

False pork belly

Carefully mix all the meatloaf ingredients together. Dust the bottom of a loaf pan with breadcrumbs. Spread half of the meatloaf batter evenly in the pan. Use a spoon to make a long hollow in the center. Place the boiled eggs one after the other, then place the other half of the meatloaf batter on top and press down firmly. If desired, top with bacon strips. Bake in the oven at 220°C for about 50 minutes.
