Ingredients for 20 servings:

  • 500 g beans (black-eyed peas)
  • 2 onions
  • 1 can of corned beef
  • 100 ml oil
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp thyme
  • 1 tsp curry
  • 100 g tomato paste
  • 5 eggs, hard boil, quarter

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Nigeria

Soak the beans overnight. I use a large pot with plenty of water. The next day, skin the beans. Rub them between your hands (I always keep my kids busy doing this). Puree the skinned beans and the chopped onion. Stir in the oil, spices, and finely chopped corned beef. Fold aluminum foil into rectangular bags (10×15 cm). Fill them with the bean mixture. Add a quartered egg. Seal tightly. Place in a pot. Add enough water to the pot so that the bags are not covered. Bring the water to a boil and simmer gently in the covered pot for about 1.5 hours. Then the bean cake is ready.
