Ingredients for 1 servings:

  • 6 eggs
  • 500 g sugar
  • 500 g almond(s), ground
  • 35 g cinnamon powder
  • 100 g candied lemon
  • 2 lemon(s), zest
  • n. B. Wafers
  • n. B. chocolate glaze
  • e.g. nuts or almonds for decoration

Instructions

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

without flour

Whisk the eggs and sugar in one direction for about half an hour until the sugar has dissolved. Add the remaining ingredients and mix well until a very thick mixture forms. Refrigerate the mixture and let it rest for 30 minutes. Then, using two teaspoons, scoop out the dough and place it on the wafers. Decorate with nuts or almonds, if desired. Bake the cookies on a baking sheet at 150 degrees Celsius (300 degrees Fahrenheit) for about 15 to 20 minutes. Once cooled, decorate with chocolate glaze.
