Lamb's lettuce à la Kölln

Ingredients for 4 servings:

  • 2 tbsp oil (walnut oil)
  • 50 g oat flakes (Köllns Echte Kernige)
  • Iodized salt
  • pepper, black
  • Cayenne pepper
  • 125 g lamb’s lettuce
  • 1 carrot(s)
  • 3 tbsp balsamic vinegar
  • 2 tsp sugar
  • salt and pepper
  • 4 tbsp oil (walnut oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat oil in a pan and gently toast the oats. Sprinkle with a pinch each of salt, pepper, and cayenne pepper and toast over medium heat until golden brown. Sort, wash, and spin dry the lamb’s lettuce. Peel the carrot and grate it into fine strips. Place it in a bowl with the lamb’s lettuce. For the dressing, mix the vinegar with sugar and a pinch each of salt and pepper. Add oil and whisk until fluffy. Pour over the salad and toss to coat. Serve sprinkled with savory toasted flakes.
