Ingredients for 1 servings:
- 125 g margarine
- 100 g sugar
- 4 m.-sized eggs
- 50 ml apple juice
- 200 g flour
- 3 tsp, leveled baking powder
- 500 g apples
- 2 tsp cinnamon
- 3 tbsp Amaretto or almond syrup
- 6 sheets of gelatin
- 150 ml apple juice
- 40 g sugar
- 600 ml cream
- 2 packets of vanilla sugar
- ½ pack of vanilla pudding powder
- 125 ml milk
Instructions

Apple pudding cake
Preheat the oven to 180°C fan/convection oven. Beat the margarine and sugar until fluffy. Add the eggs one at a time and beat well. Pour in the apple juice. Mix the flour with the baking powder and stir in. Bake the batter in a springform pan for about 30 minutes, then let it cool. Peel and dice the apples, then mix with the cinnamon and amaretto or syrup and let it sit for a while. Cut the cake base in half. Place a cake ring around one layer and fill it with the apples, leaving a 2 cm border free. Soak the gelatine in water. Heat the apple juice with 30 g of sugar and dissolve the gelatine in it. As soon as the mixture begins to set, whip the cream with the vanilla sugar until stiff and fold in. Spread the cream over the apples and place the second layer on top. Chill the cake for about 3 hours. Mix the custard powder with 10 g of sugar and 2 tablespoons of milk. Bring the remaining milk to a boil, stir in the pudding mix, and bring back to a boil. Remove the pudding from the heat and let it cool slightly, then spread it over the cake. Once cooled, decorate as desired, e.g., with fruit or chocolate decorations. Yields 350 kcal per serving based on 14 slices.
