Ingredients for 1 servings:
- 3 kg mixed dried fruits (plums, apricots, figs, pears, raisins, cranberries)
- 1 pack of candied lemon peel
- 1 pack of candied orange peel
- 500 g almonds and hazelnuts, whole, mixed
- 2 tbsp gingerbread spice
- 3 tbsp rum
- 10 g dry yeast
- 400 g flour
- 1 pinch of salt
- 1 pinch(s) of sugar
- 250 ml milk
Instructions
Working time approx. 1 hour 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 1 hour; Total time approx. 1 day 2 hours 30 minutes
Cut the dried fruit into approximately 1 cm pieces and mix with the candied lemon peel, candied orange peel, and nuts. Add the rum and gingerbread spice, mix everything together, and let it sit in a covered bowl, preferably overnight. Put the flour in a bowl and mix with a pinch of salt and a larger pinch of sugar. Dissolve the dried yeast in a little warm milk and add to the flour. Cover and let rest in a warm place. Then mix in a food processor with a little warm milk until you have a smooth dough and let rest again in a warm place. After it has rested, knead the yeast dough into the fruit and nut mixture. Shape the dough into small loaves. Bake in an oven preheated to 150°C (300°F) for about 1 hour.
