Mom's potato salad

Ingredients for 8 servings:

  • 1 ½ kg potatoes, waxy
  • 300 g yogurt
  • 500 g meat sausage
  • 300 g gherkins
  • 1 jar salad cream (Miracel Whip) or mayonnaise
  • 10 eggs
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp herbal salt
  • 1 tsp Italian herbs
  • 1 tsp black pepper

Instructions

Working time approx. 40 minutes; Rest period approx. 1 day; Cooking/baking time approx. 20 minutes; Total time approx. 1 day 1 hour

Boil the potatoes in salted water with their skins on until tender (about 20 minutes, depending on their size). Then rinse them in water, peel them, and slice them. Hard-boil the eggs (about 10 minutes), then peel and slice them. Dice the sausage and gherkins. Combine the oil, vinegar, yogurt, mayonnaise, and seasonings in a bowl, mix well, and season to taste. Add the prepared potato salad ingredients to the dressing and mix well. Let it sit in the refrigerator overnight and then season to taste.
