Ingredients for 4 servings:

  • 1 kg beef
  • n. B. vinegar
  • 1 tsp salt
  • 10 peppercorns
  • 10 juniper berries
  • 2 bay leaves
  • 2 thick carrots
  • 1 onion(s)
  • n. B. Sauce thickener

Working time approx. 2 hours 30 minutes; Total time approx. 2 hours 30 minutes

My mother’s original recipe

Finely chop the onions and carrots and place them in a pot with the meat and all the other ingredients. Pour enough vinegar into the pot to cover the meat. Leave it in the refrigerator for 3-4 days, covered. Remove the meat from the marinade and place it in an ovenproof pot with a lid, or a casserole dish covered with aluminum foil, along with 1/4 liter of the marinade and all the vegetables. Cook in the oven at 200°C (top, bottom heat, or fan-assisted) for about 2-2.5 hours. After about 2-2.5 hours, remove the meat from the pot or casserole dish. Strain the marinade and thicken with gravy powder.
