Zucchini salad with tomato

Ingredients for 4 servings:

  • 1 thick zucchini or 2 thin ones, cut into fine strips or coarsely grated
  • 1 onion(s), finely diced
  • some olive oil
  • salt and pepper
  • 3 tomatoes, sliced
  • 125 g mozzarella, drained, sliced
  • 1 tbsp olive oil
  • ½ lemon(s), the juice
  • salt and pepper
  • 2 cloves garlic
  • 2 tbsp parsley, flat, finely chopped

my original recipe

Heat 1 tablespoon of olive oil in a pan (preferably nonstick) and sauté the zucchini and onion over low heat. Season with salt and pepper, then remove from heat and let cool. Make a marinade with 1 tablespoon of olive oil, lemon juice, salt, pepper, garlic, and parsley. Arrange the salad on a large platter (a large plate or casserole dish will also work): First, spread the zucchini and onion mixture, then the tomato slices. Top with the mozzarella slices. Chill and drizzle with the marinade just before serving.
