Ingredients for 4 servings:
- 4 large potatoes
- 1 large onion(s)
- 1 pack of soup vegetables, frozen
- e.g. vegetable broth
- Salt and pepper, black, from the mill
- nutmeg
- 40 g bacon, streaky
- 1 bunch of chives
- ½ tbsp flour
- 1 jar sausages, wieners or something in a tender casing
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Peel the potatoes and cut into bite-sized cubes. Also dice the bacon. Finely chop the chives and onions. Cook the potatoes in the broth with a little salt until almost cooked. Be careful with the salt, as the broth is already quite salty. Meanwhile, fry the bacon in a little oil, add the onions and sauté until translucent; they shouldn’t brown. Then add the flour and gradually deglaze with the cooked potatoes in the broth. Stir vigorously to prevent sticking. Let it simmer gently, then remove from the heat. Season to taste with chives, salt, pepper, frozen soup vegetables, and nutmeg. Slice the sausages and let them simmer in the soup.
