Mozzarella and nectarine towers

Ingredients for 2 servings:

  • 2 balls of mozzarella
  • 1 nectarine(s)
  • salt and pepper
  • 1 egg(s)
  • some flour
  • some panko or breadcrumbs
  • Oil for frying
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 sprig(s) rosemary
  • some berries, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

with breaded and fried mozzarella

For the glaze, heat honey, vinegar, and chopped rosemary together and let stand for about 10 minutes. Then strain. Drain the mozzarella and pat dry with a paper towel. Halve it, season with salt and pepper. Coat it one after the other in flour, egg, and breadcrumbs, lightly pressing the coating into the crust. Fry in the heated oil until golden brown. Cut the nectarine into wedges and lightly sauté them in oil. Alternate the mozzarella slices and nectarine wedges. Drizzle with the honey-vinegar glaze (without the rosemary), season with freshly ground pepper, if desired, and garnish with berries.
