Mozzarella gnocchi

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 garlic cloves
  • some olive oil
  • 1 tbsp sugar
  • 800 g pizza tomatoes
  • 400 g gnocchi from the refrigerated section
  • 375 g buffalo mozzarella
  • rosemary
  • Thyme
  • salt and pepper
  • basil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Peel and finely chop the onion and garlic. Sauté in olive oil over medium heat until translucent, stirring occasionally. Sprinkle with sugar and caramelize. Pour the pizza tomatoes into the caramelized onions and season with rosemary, thyme, salt, and pepper. Simmer uncovered for about 15-20 minutes. Meanwhile, pre-cook the gnocchi in boiling salted water according to the package instructions. Drain the gnocchi, place in a baking dish, and pour the seasoned tomato sauce over them. Finely shred the mozzarella and spread it on top. Bake in the oven at 200°C for 10 minutes. Garnish with basil leaves and serve.
