Mozzarella in potato crust

Ingredients for 4 servings:

  • 200g mozzarella
  • 2 apples
  • 300 g potatoes
  • 1 tbsp marjoram, picked leaves
  • 1 tbsp thyme, picked leaves
  • 2 tsp lemon juice
  • 2 egg yolks
  • 1 tbsp potato starch
  • Salt and pepper, from the mill
  • 2 eggs
  • 5 tbsp flour
  • 2 tbsp oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the mozzarella and slice it. Peel the apples and potatoes, wash the potatoes, finely grate them, and mix them together. Wash the marjoram and thyme leaves, pat them dry, finely chop them, and stir them into the apple and potato mixture along with the lemon juice, egg yolk, and potato starch. Season the mixture with salt and pepper. Beat the eggs. Coat the mozzarella slices first in flour, then in the beaten egg, and then coat them in the potato mixture. Fry in heated oil for about 10 minutes until crisp and golden brown. Serve best over a crisp leaf salad.
