- 1 large zucchini
- n. B. cooked ham
- e.g. Gouda or butter cheese in slices
- salt and pepper
- Flour
- 2 eggs
- breadcrumbs
- Clarified butter for frying

Finally a recipe that requires a large zucchini!
This recipe is so simple and yet so delicious: Cut the zucchini (ideally at least 10 cm in diameter) into slices about 5 mm thick. Place a slice of ham and a slice of cheese between each two zucchini slices. I always cut out the ham and cheese with a large round cutter, but that’s not necessary. The main thing is that there isn’t too much overhang. You don’t need to secure it with a toothpick or something similar; the slices will hold together well anyway. Then season the finished cordon bleus with a little salt and pepper and bread them. First coat in flour, then in beaten egg, and finally in breadcrumbs. Heat the clarified butter in a pan and fry the zucchini cordon bleus on both sides until crispy and golden brown. We serve this with rosemary potatoes and salad, but it also works well with carrot and potato salad. It’s also delicious as a starter with a small leaf salad! The amount of ham and cheese depends on the number and size of the zucchini slices.
