Mozzarella potatoes with pepper salad

Ingredients for 1 servings:

  • 2 spring onions
  • 1 small onion(s)
  • 70 g light mozzarella
  • 3 large potatoes, cooked
  • 2 pieces of bell pepper
  • 2 tsp oil
  • Vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Suitable for WW – 11 people per person

Chop the spring onions, grate the mozzarella, and mix both with 1 teaspoon of oil, season with salt and pepper, and let stand for about 15 minutes. Halve the potatoes and layer them in a baking dish, spreading the mozzarella mixture on top. Bake in a preheated oven at 200°C for about 15 minutes. For the salad, dice the bell peppers, dice the onion, and season both with vinegar, the remaining oil, salt, and pepper.
