Mud Cake – Muffins with chocolate

Ingredients for 1 servings:

  • 300 g chocolate, chopped
  • 300 g butter
  • 5 eggs
  • 25 ml sugar
  • 200 ml wheat flour, extra fine
  • 2 tbsp cocoa powder

Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit) and place 12 paper baking cups in the muffin tins. Melt the chopped chocolate and butter in a medium saucepan over low heat. In a large bowl, beat the eggs and sugar until frothy. Add the flour first, then the chocolate-butter mixture. Mix well and pour the batter into the tins. Bake for 20 minutes. The muffins should be soft and slightly sticky in the center to ensure they are done. Remove from the oven and let rest for 5 minutes, then remove and sprinkle with cocoa powder. The muffins taste best with vanilla ice cream. They will keep in a Tupperware container in the refrigerator for up to 3 days.
