Muesli cake

Ingredients for 1 servings:

  • 100 g muesli (fruit muesli)
  • 75 g honey
  • 100 g raisins or other dried fruits
  • 125 ml apple juice
  • 1 apple
  • 100 g wholemeal wheat flour or wholemeal spelt flour
  • 1 tbsp cream of tartar baking powder
  • possibly nuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Cake without fat or eggs, vegan version possible

Combine the muesli, honey, raisins, and apple juice and let it sit for 30 minutes. Grate the apple with its peel and stir it in. Finally, stir in the flour mixed with the baking powder. Pour into a well-greased 18 cm cake tin and level the surface. Top with nuts, if desired, and bake at 180°C in a preheated oven with conventional heat for approximately 45-60 minutes. Let cool for a few minutes and then remove from the tin. Tip: If you replace the honey with cane sugar, the cake is vegan.
