Oatmeal muffins with raisins

Ingredients for 12 servings:

  • 90 g oat flakes
  • 250 ml buttermilk
  • 120 g butter, soft
  • 100 g sugar, brown
  • 1 egg(s)
  • 120 g flour
  • 1 tsp baking powder
  • some baking soda
  • Salt
  • 30 g raisins

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the oats with the buttermilk and let them soak for about an hour. Preheat oven to 175°C and grease a muffin tin thoroughly or line it with paper baking cups. Beat the butter, sugar, and egg until smooth. Combine the flour, baking powder, baking soda, and salt and stir into the butter and egg mixture. Fold the soaked oats, buttermilk, and raisins into the mixture. Pour the batter into the muffin tins and bake in the oven for about 20-25 minutes.
