Muesli muffins

Ingredients for 1 servings:

  • 150 g wholemeal spelt flour
  • 2 tsp baking powder
  • 60 g sugar
  • ½ tsp cinnamon powder
  • 100 g dried fruit (e.g. plums or dates)
  • 80 g walnuts
  • 2 small apples (approx. 220 g)
  • 50 g oat flakes
  • 250 g low-fat curd cheese
  • 2 eggs
  • 80 ml rapeseed oil
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Combine wholemeal spelt flour, baking powder, sugar, and cinnamon. Chop the dried fruit and walnuts. Wash, quarter, core, and chop the unpeeled apples. Mix with the dried fruit, walnuts, and oats. Then mix the quark with the eggs and oil until smooth. Quickly stir in the flour and muesli mix. Pour the batter into a greased 12-hole muffin tin. Bake the muffins in the oven for about 20-25 minutes at 180°C (top/bottom heat). Let cool slightly and then remove from the tin. The muffins are perfect as a healthy snack between meals, as a kind of “muesli to go” for the office, school, or similar. They also freeze well.
