Muesli Thalers
The perfect muesli thalers recipe with a picture and simple step-by-step instructions.
Dough:
- 200 g Butter at room temperature
- 100 g Powdered sugar
- 1 pinch Salt
- 1 Egg
- 300 g Sifted flour
Muesli mass:
- 400 g Sugar brown
- 150 g Honey
- 1 pinch Salt
- 100 ml Cream
- 120 g Candied fruit mix
- 320 g Mix of seeds consisting of sunflower, pumpkin and pine
- 50 g Sesame mix consisting of sesame and bran
Dough:
- First knead all ingredients with the dough hook of the hand mixer to a crumbly mass. Then place this on a mat and continue working with your hands. Until a smooth dough is formed. Wrap this in cling film and place in the refrigerator for about 30 minutes.
- Then roll out the dough in portions to a thickness of approx. 4 mm and cut out approx. 10 – 12 cm circles. Place this at a distance on several baking sheets lined with baking paper and carefully prick several times with a fork or roll over it lightly with a “pin roller”. This will prevent them from forming bubbles when you bake.
- Slide the trays into the oven one after the other on the middle rail. Baking time approx. 10 minutes. The edges may take on a light color, but the entire thalers should remain quite light. After baking together with the baking paper, cool completely on a rack and let it set. The shortcrust pastry is very fragile when it is warm. Then spread the cooled dough coins (still with the baking paper) on a smooth surface and keep them ready.
Muesli mass:
- Roughly chop the candied fruits. Heat sugar, honey and salt and simmer over medium temperature until the coarse sugar has melted. Always keep an eye on the temperature and stir so that nothing burns. When no more crystals can be seen, pour in the cream while stirring and let everything simmer again. The mass is then still quite light.
- Now add the grains, fruits and sesame seeds and stir everything well. Turn the heat down a little more and let everything simmer and stir until the caramel mass including the grains has got a golden brown color. Then take the pot off the stove immediately and use 2 spoons to spread the mixture evenly and generously up to the edge on the thalers. CAUTION HOT.
- Then let it cool down (but it’s difficult …………. ;-)) and “dope” with it later ….
- They freeze well. However, you should let them thaw at room temperature, so the consistency is better preserved. When baking, the caramel mass becomes liquid and runs out.
Tip about the ingredients:
- You can get the grains, fruits and sesame mix (if possible) in the fruit department of the metro. There you can get larger amounts for little money. Otherwise in smaller quantities, but for big money at Edeka …….
