Muesli waffles with plum jam

Ingredients for 6 servings:

  • 100 g butter
  • 60 g honey
  • 1 pinch of flavoring (vanilla)
  • 2 eggs
  • 100 g quark
  • 100 g flour (spelt flour)
  • ½ tsp baking powder
  • 80 g muesli, unsweetened mix
  • 150 ml mineral water or fruit juice
  • 1 kg plum(s) (prunes)
  • 1 pinch of cinnamon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk the fat with honey and vanilla extract until creamy. Stir in the eggs and quark. Combine the flour, baking powder, and muesli and stir in. Add water or juice until the batter falls off the spoon. Let the batter rest for 30 minutes. Add a little more liquid if necessary. Pour about 2 tablespoons of batter into the hot waffle iron for each waffle and bake until golden brown. For the compote, wash, pit, and quarter the plums. Simmer the plums with cinnamon over low heat, stirring constantly, until a thick jam forms. Serve the waffles with the plum jam.
