Muffins with bacon and onions

Ingredients for 10 servings:

  • 2 onions
  • 150 g bacon, diced
  • 50 g butter
  • 2 eggs
  • 250 ml buttermilk
  • 250 g flour
  • 3 tsp baking powder
  • 1 tsp sugar
  • 1 tsp salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the onions. Brown the bacon cubes without adding any fat. Add the butter and onions and sauté briefly. Let cool, but the butter should still be liquid. Add the eggs and buttermilk and mix well. Mix the flour, baking powder, sugar, and salt in a bowl. Mix well with the other ingredients. Grease a muffin tin or place two paper baking cups inside each other on a baking sheet. Fill the cups two-thirds full with batter. Sprinkle with cheese, if desired. Bake for approx. 25 minutes in the center of an oven preheated to 180°C. Serve hot or cold.
