Muffins with plums and marzipan

Ingredients for 1 servings:

  • 300 g flour
  • 2 tsp, leveled baking powder
  • 120 g sugar
  • 2 eggs
  • 1 packet of Bourbon vanilla sugar
  • 85 ml oil, neutral
  • 100 ml milk
  • 500 g plum(s), fresh, diced
  • 200 g marzipan paste
  • 4 g cinnamon
  • some almond sticks

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Whisk the sugar, eggs, and oil in a bowl until fluffy. Add the flour, baking powder, milk, marzipan, and cinnamon and mix. Fold in the finely diced plums. Fill the muffin tins 3/4 full with the batter and sprinkle with a few slivered almonds. Depending on the size of the tins, this will yield approximately 20-24 muffins. Preheat the oven to 170°C (convection oven). Bake the muffins for approximately 20 minutes, depending on the size of the tin. Check with a wooden skewer that no more batter is sticking to them and that they are cooked through. Instead of plums, these muffins can be baked with all kinds of sour fruit, such as apples, sour cherries, or rhubarb. The fruit acidity harmonizes beautifully with the sweet marzipan.
