Ingredients for 1 servings:

  • 2 tbsp rapeseed oil
  • 3 tbsp sugar
  • 1 egg(s)
  • 1 tbsp lemon juice, preferably freshly squeezed
  • 1 tsp organic lemon zest
  • ¼ tsp baking powder
  • 5 tbsp flour
  • 1 pinch of salt

Working time approx. 5 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 8 minutes

In a large bowl, combine the oil, sugar, salt, egg, lemon juice, and zest with a fork until the sugar dissolves. Briefly stir in the flour mixed with the baking powder and bake the cake in the microwave at 800 watts for about 2.5 minutes. The baking time may vary depending on the microwave. Let cool slightly and enjoy. If you like, top with a dollop of whipped cream and sprinkle with 1 teaspoon of lemon zest.
