Muhallebi – Dessert

Ingredients for 4 servings:

  • 1 liter low-fat milk
  • 4 tbsp flour (rice flour)
  • 2 tbsp powdered sugar
  • 1 tsp cornstarch
  • ½ tsp flavoring, Damla sakizi (dried pine resin)
  • Nuts, chopped
  • Cinnamon

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Rice pudding, gluten-free

Bring the milk to a boil in a saucepan. Meanwhile, pulverize the damla sakizi using a mortar and pestle or similar method and mix it with the rice flour, starch, and sugar until dry. Gradually stir it into the milk using a whisk and continue stirring for 2 minutes. Remove the pan from the heat and let it cool. Chill thoroughly in the refrigerator and sprinkle with chopped nuts and cinnamon before serving. If you like it sweeter, add a tablespoon of sugar to the milk. Variations include muhallebi with raisins, sprinkled with desiccated coconut, chopped pistachios, or garnished with fresh fruit (e.g., pomegranate seeds). Damla sakizi is available in Turkish shops and is often used in desserts. Tip: Have your own rice flour ground at a health food store or mill, or buy it there.
