Mulled wine cherry compote

Ingredients for 1 servings:

  • 350 ml mulled wine
  • 150 ml cherry juice
  • 350 g sour cherries, drained
  • 40 mg rum, brown
  • 35 g cornstarch

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Drain the sour cherries from the jar, reserving the juice. Measure the juice and sour cherries as directed. Combine the mulled wine and cherry juice in a saucepan. Take 50g of the cold liquid and mix with the cornstarch until smooth. Bring the mulled wine and cherry juice to a boil, remove from the heat, and whisk in the starch mixture. Cook the berry compote for about 1 minute, stirring constantly, then remove from the heat and stir in the rum and cherries. Enjoy the mulled wine and cherry compote cold or warm, e.g., with waffles, steamed dumplings, pancakes, or as a dessert. Use the remaining cherry juice for another purpose.
