Mushroom and lovage salad

Ingredients for 2 servings:

  • 400 g mushrooms
  • 1 m.-sized onion(s)
  • 1 bunch lovage
  • 6 tbsp olive oil, mild
  • 2 tbsp balsamic vinegar, lighter
  • 1 pinch of salt
  • 1 pinch(s) of pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Clean the mushrooms, remove the stems, and thinly slice the caps. Peel the onion, quarter it, and cut it into very thin strips. Wash the lovage, pick off the leaves, and cut it into thin strips. Mix the vinaigrette, thin with a little water if necessary, and combine everything. Let it stand for 1 hour before serving, then season to taste.
