Mushroom and spinach pan

Ingredients for 1 servings:

  • 250 g mushrooms, brown
  • 250 g leaf spinach, frozen
  • 75 g ham, diced, lean
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tsp oil
  • 4 tsp cream cheese, reduced fat
  • Pepper, freshly ground black
  • possibly salt
  • Water

First, thaw the spinach leaves. I always do this in the microwave; it’s quick and easy. Meanwhile, peel and dice the onion and garlic clove, and trim and chop the mushrooms. Then, squeeze some of the liquid from the thawed spinach and chop it coarsely if necessary. Heat the oil in a non-stick pan and sauté the diced onion and garlic. Then add the ham and sauté for about 5 minutes. Next, add the mushrooms to the pan and sauté until they release some of the moisture. Now add the spinach and heat through. Season with pepper. Add a little more salt if desired, but the ham is already salty enough. Finally, stir in the cream cheese and let it melt. Add a little more water if the mixture is too mushy.
