Ingredients for 4 servings:
- 10 large mushrooms, very finely chopped
- ½ vanilla pod(s)
- ½ tsp cinnamon powder
- 1 tsp fennel seeds, ground
- 25 g sugar
- 2 tbsp balsamic vinegar, white
- salt and pepper
- 2 tbsp olive oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Caramelize the sugar until light brown, deglaze with balsamic vinegar, and add the spices. Reduce the heat. Add the mushrooms and simmer until the liquid from the mushrooms has almost evaporated. Season with salt and pepper and thicken with the olive oil.
