Mushroom salad with feta cheese à la Tuscany

Ingredients for 6 servings:

  • 500 g white mushrooms
  • 200 g sheep’s cheese or Emmental
  • 1 lemon(s)
  • 50 g parsley
  • 50 ml extra virgin olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and wash the mushrooms and slice them thinly. Thinly slice the feta cheese and mix it with the mushrooms. Freezing the feta cheese for 40 minutes makes it easier to slice. For the dressing, combine the salt, pepper, and lemon juice, then mix with the olive oil. Finally, add the finely chopped parsley. Stir the dressing into the salad 30 minutes before serving.
