Mushroom soup

Ingredients for 4 servings:

  • 500 g mushrooms
  • 30 g butter
  • 1 large onion(s)
  • 1 liter meat broth, from stock cubes
  • Salt
  • 40 g flour
  • ½ cup yogurt
  • Pepper, white

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Roughly slice the cleaned mushrooms. Heat the butter and sauté the mushrooms. Then brown the peeled, roughly diced onion. Sauté for about 5 minutes. Add the hot meat broth, season with salt and pepper, and simmer for 15 minutes. Dissolve the flour in cold water. Thicken the soup with this. Simmer for 7 minutes, then stir in the yogurt. Bring to a boil and remove from the heat. Divide the soup among four large bowls. If desired, add a few more prawns and dill sprigs to the soup.
