Mushroom strudel

Ingredients for 2 servings:

  • 1 pack of puff pastry, vegan
  • 250 g mushrooms
  • 75 g smoked tofu
  • 100 ml soy cream (Soy Cream Cuisine)
  • 150 g cheese, vegan, (pizza melt)
  • 1 onion(s)
  • 1 clove(s) garlic
  • Fat, for the pan
  • salt and pepper
  • possibly vegetable broth, instant

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Roll out the puff pastry. Wash the mushrooms and slice them. Dice the onion and garlic and sauté them in a pan with a little fat until translucent. Add the smoked tofu and mushrooms and fry until the mushrooms are tender. Add the soy cream and bring to a boil. Remove the pan from the heat and stir in the pizza cheese. Season with salt and pepper, and add vegetable stock if desired. Pour the mixture onto the puff pastry and fold it over. Bake the strudel at 220°C (top/bottom heat) for 15-20 minutes. This serves two people without any side dishes.
