Mushroom – tomato – pan

Ingredients for 4 servings:

  • 1 kg mushrooms
  • 1 large onion(s)
  • 2 small garlic cloves
  • 40 g butter
  • 250 g tomatoes
  • 2 balls of mozzarella
  • 1 bunch of basil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the mushrooms, wash them if necessary, and pat them dry. Peel the onion and garlic. Finely dice the onion and press the garlic through a press. Heat the butter in a pan and fry half of the mushrooms until browned, then remove. Fry the remaining mushrooms in the remaining fat. Add the onion and garlic towards the end of the cooking time and fry briefly. Mix with the remaining mushrooms in an ovenproof dish and season with salt and pepper. Slice the tomatoes, drain the mozzarella and also slice them. Cut the basil into strips, leaving a little for garnish. Top the mushrooms with the tomatoes and mozzarella. Sprinkle with salt, pepper, and basil, and bake in a preheated oven at 225°C for 20-25 minutes. Sprinkle with the remaining basil. Enjoy with baguette!
