Mushroom – Vegetable – Goulash

Ingredients for 4 servings:

  • 3 onions
  • 3 cloves garlic
  • 200 g carrot(s)
  • 100 g celery
  • 1 bell pepper(s), green
  • 600 g mushrooms
  • 2 tbsp oil
  • 2 tbsp tomato paste
  • 1 pinch(s) paprika powder, hot
  • 1 tsp sweet paprika powder
  • 1 bay leaf
  • 1 tsp thyme
  • 600 ml vegetable stock
  • pepper, black
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the onions. Heat the oil in a non-stick pan. Sauté the onions over low heat until translucent. Finely chop the garlic, carrot, bell pepper, and celery and add them. Stir-fry. Season with salt. Stir in the tomato paste, paprika, thyme, and bay leaf. Pour in the stock. Simmer gently for 20 minutes. Quarter the mushrooms and stir in, then simmer for 10 minutes. Season to taste with salt and pepper. Serve with parsley potatoes.
