Mushrooms – Greek style

Ingredients for 2 servings:

  • 500 g mushrooms, fresh, alternatively 2 cans
  • 5 tbsp tomato paste
  • 2 tbsp sherry or white wine
  • Oil (olive oil), for sautéing
  • 1 tbsp coriander
  • clove(s), ground
  • Salt and pepper, salt,
  • Parsley, plenty
  • 2 bay leaves
  • Thyme
  • lemon(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash fresh mushrooms and quarter or slice thickly, depending on their size. Pour olive oil into a pan, add sherry, lemon, and spices, and sauté the mushrooms. Then add the tomato paste and the herbs. (Don’t be too sparing with the coriander and cloves; they can dominate a bit.) Remove the bay leaves before serving, of course. The mushrooms make a good starter or a quick snack; I serve them with buttered toast.
