Mushrooms in a nest of radish, carrot and zucchini noodles

Ingredients for 2 servings:

  • 250 g mushrooms, brown
  • 250 g white mushrooms
  • 1 onion(s), finely chopped
  • 1 garlic clove(s), finely chopped
  • 2 tbsp crème fraîche with herbs
  • 1 large radish(s)
  • 1 large carrot(s)
  • 2 zucchinis
  • Rapeseed oil
  • salt and pepper

Clean and halve the mushrooms. Clean the vegetables and julienne them. Heat the oil in a pan, sauté the garlic and onion briefly, add the mushrooms, and cook over medium heat for about 10 minutes. Stir in the crème fraîche and season the vegetables with salt and pepper. Heat the oil in a second pan and cook the vegetable strips over medium heat for about 10 minutes. The vegetables should retain some bite. Season with salt and pepper. Using a fork, arrange the vegetables in a nesting pattern on plates, placing the mushrooms in the center.
