Ingredients for 2 servings:
- 150 g brown rice
- 1 can of mussels, natural
- 200 g cocktail tomatoes
- 1 pinch of garlic granules
- salt and pepper
- Oregano, dried
- olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Cook the rice in salted water according to the package instructions until al dente. Quarter the cherry tomatoes. Heat olive oil in a pan. Sauté the drained mussels with the garlic granules for 2-3 minutes. Add the cherry tomatoes and oregano, season with salt and pepper. Stir in the cooked rice and let stand for a few more minutes with the heat off.
