noble culinary gift, wonderful with cheese

Makes approx. 600 ml Peel and dice the figs and place them in a tall saucepan. Mix the Gelfix with roughly the same amount of sugar and stir into the figs. Finely chop the chili and add to the figs. Season the mixture with the lemon juice, mustard powder, mustard seeds, Dijon mustard, and plenty of white pepper. Bring everything to a boil, stirring constantly, then add the remaining sugar. Bring back to a boil and simmer for at least 3 minutes. Pour the hot mustard into prepared jars and seal immediately. Turn the jars upside down and let them cool, upright on the lid. The mustard tastes particularly good with cheese.
