Naomi's plaice rolls in a light cheese sauce

Ingredients for 2 servings:

  • 4 fish fillets (plaice fillets without skin, approx. 300 g)
  • 2 tbsp lemon juice
  • 1 small onion(s) or shallot
  • 1 small red bell pepper(s)
  • 1 small zucchini
  • 1 tbsp oil
  • 100 ml vegetable stock
  • 2 sprigs of thyme or 1/2 tsp. dried thyme
  • 150 g processed cheese, light (tomato-pepper)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the plaice fillets, pat dry, and halve lengthwise. Drizzle with lemon juice and let stand for about 10 minutes. Preheat the oven to 200°C (180°C fan-assisted oven). Wash the zucchini and cut 8 slices lengthwise using a vegetable peeler. Dice the rest. Dice the onion and pepper as well. Heat the oil, sauté the diced vegetables for about 3 minutes, then pour in the stock. Add the thyme and bring to a boil. Stir in the cheese, stirring constantly until melted. Pat the fish fillets dry and sprinkle with salt and pepper. Place the zucchini slices on top, roll them up, and secure with toothpicks. Place in a baking dish and pour the sauce over them. Bake in the preheated oven for about 15 minutes. Serve with rice or mashed potatoes.
