Ingredients for 4 servings:
- 12 slice(s) dumplings (napkin dumplings)
- 1 onion(s)
- 175 g lamb’s lettuce
- 4 tomatoes
- 6 eggs, hard-boiled
- 2 bell peppers
- chives
- 3 tbsp mustard
- 5 tbsp Balsamic vinegar, white
- 8 tbsp pumpkin seed oil
- Salt
- pepper
- 2 tsp sugar or honey

Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes
Arrange the dumpling slices on plates. Place a handful of lamb’s lettuce on top of the dumpling slices. Finely slice the onion. Slice or quarter the tomatoes. Chop the peppers. Cut the eggs into eighths, and then arrange everything on the plates. Vinaigrette: Place the mustard, vinegar, oil, salt, pepper, sugar, or honey in a jam jar, close tightly, and shake vigorously until a creamy emulsion forms. Then pour the emulsion onto the plates over the salad. Garnish with chive curls.
